Vegspiration: Salads

Tired of boring salads? I've posted before on big salads and ideas, but here's a little eye-candy and some recipe links to get you inspired:


Salads pictured above, clockwise from top left: Artichoke & chickpea salad, Fresh summer corn & avocado salad, Broccoli, mushroom & tofu salad, Kabocha squash salad, Asian spinach salad with miso dressing, Broccoli, chickpea, and tomato salad, and (middle): an easy big salad.



All of these are favorites, as are the Tofu Crunch Salad (a great alternative to tuna or chicken salad, and very easy to make), and kale salads with delicious dressings.

Above: Fresh Green Bean Salad- easy, a little crunchy, and delicious.


Above: Raw Kale Salad with lentils and tomatoes. Trader Joe's has some great bagged lentil mixes that you simply soak and then boil, and they make for a great addition to a kale salad.

  1. I love eating giant salads for a meal...the chickpea and artichoke one sounds really good - I've made a similar one multiple times and it's always a hit!
