Avocado & Pinto Bean Salad


Nothing fancy or complicated here. Think: open a can 'o beans and have easy yummy dinner/lunch/snack/salad ready in 5. Sound good?! Good!

Yes, canned beans are not anything fresh or amazing. But, adding fresh herbs really changes everything.

Easy-peasy Ingredients and Instructions:
  • 1 can pinto beans, drained and rinsed
  • 1 avocado, sliced into chunks
  • Juice and zest from one lime
  • 3 Tbsp cilantro, chopped
Gently fold in the avocado to the beans in a large bowl. Then mix in the lime juice, zest and cilantro.
Chill in the fridge prior to serving.
