Strawberry Pancakes


Not gonna lie, my top fruit-filled pancake choices are usually banana (#1) or blueberry (#2). But I was inspired by Chocolate Covered Katie's strawberry shortcake pancakes to try out a different pancake version, and OH MY were these guys yummy...

I pretty much stuck to CCK's recipe, so I'll defer to her site for more info. In my version, I used stevia for the sweetener, a mix of whole wheat pastry flour and all-purpose, a mix of quick and multi-grain oats, and I reduced the coconut oil to just 1/4 tsp. I also added 1/8 tsp maple extract, which I think was a good addition! Especially since my maple agave syrup blew up in my microwave. Literally. I had it in a mini glass pitcher (that I've microwaved before) and the entire thing shattered. Whoops. Oh well; breakfast was still yummy...



These were a thick pancake, not light & fluffy, but delicious all the same. Next time though, I might have to try strawberry-banana- I just love my banana too much :-)

  1. I was just thinking what I should do with the bag of frozen strawberries from last years harvest, maybe these? they look so yum!
