Super Apple Salad

This simple apple salad is light and refreshing, but filling and nutritious. Crisp, slightly sweet Gala apples with a savory twist.

Super Apple Salad
Ingredients:
  • 4 Gala apples
  • ~1/4 cup Vegenaise 
  • 2 tsp dijon mustard
  • 1 tsp lucuma powder (can omit or sub with agave syrup)
  • 1 Tbsp flax seeds
  • 1 Tbsp sunflower seeds
  • 3 Tbsp fresh chopped dill
  • Salt and pepper to taste
Mix together the Vegenaise, mustard, and lucuma powder, and then add in the remaining ingredients. Toss to coat, and chill before serving. Store for up to 2-3 days.

This goes perfectly over a bed of fresh baby spinach or arugula. Other good add-ins would be walnuts, golden raisins, or goji berries.

 
The lucuma powder isn't absolutely necessary; if you don't want to seek it out, a little agave or maple syrup also works well in these types of salads. But I wanted to use it here since I had it on hand. The powder comes from the most amazing fruit ever, and it's a low-calorie, natural sweetener that contains zinc, iron, protein, vitamin B3, and calcium; so combined with the flax and sunflower seed (which contain healthy fats), this easy salad is pretty nutritious.
